Thai Style Chicken Curry with Noodles

Marinate
- Mix the Lime Zest, Lime Juice with the Yoghurt. Marinate
the Chicken
for 30 minutes.
Main
- Dice 100g of Sweet Potato. Fry with 1 teaspoon of Sesame
Oil until
brown.
- Throw in 100g Green Beans (snapped in pieces), 75g Dates
(chopped), 150ml Vegetable Stock, 250g Balti Sauce,
Marinated
Chicken.
- Simmer for 20 minutes.
Raita
- Finely chop Red Chilli
- Deseed and finely chop Cucumber
- Mix Red Chilli, Cucumber, Lemon Zest, Lemon Juice, Creme Fraiche,
Coriander, Salt and
Pepper.
